You did a great job. I just recently started making sourdough also.

Couple of tips would be to pre heat your bread pan for 30-45 minutes and also use a couple of ice cubes in the bottom and a spritz of water on the top before you put the lid on. This will help with the spring of the bread.

Also let the bread cool completely before cutting for best results.

Your kit has a razor for cutting the bread. A bowl scraper and bench knife/scraper and what looks to be just a butter knife. Bench scraper/knife(metal square with handle) is great for getting honestly anything off a flat surface but if you ever need to separate your dough it cuts through very nicely. The bowl scraper(plastic semi square) is a flexible not sharp version of the knife. It’s used to get remaining dough easily out of the mixing bowl and is just a good tool to have. The little razor is for exactly what you used it for. Keep up the good work!
