Those ribs looked to be pretty tender there my man. I think the wrapping KILLED your bark though. Try wrapping meat side up next time. I know that sounds completely opposite of pork ribs, and it is. But the results are way better for beef. I don't even wrap beef ribs until they come off the pit to rest. Pour a little beef tallow over the top of the meat side, and wrap meat side up and let it rest AFTER it has come down in internal temp when you finish the cook. Usually, I rest down to about 160F after pulling from the pit, then pour tallow over them and wrap and rest at 145F until we are ready to tear into them. Overall great cook considering that weather man!!! Good stuff!!!
