Actually there are actual stories about something similar to this, a creature that would hide behind trees and just peek out and watch you. Turned out it was just deer standing on their hind legs with their front legs against the tree trying to get food, then watching the human to make sure it’s safe lol

If you look closely at the monster you notice that he always starts hiding right before dipper even moves his head to look. Meaning that he has some sort of supernatural/ psychic intuition that lets him know when someone is looking for him.

I feel like Dippers last ditch effort was him tricking the monster into following him because the way he acted and just saying it out loud like that just felt like his desperate attempt to see him on camera was to make him be followed
