Healthy Cabbage Salad

This healthy cabbage salad is so vibrantly colorful, each bite packed with a whole slew of veggies and fresh herbs. It’s one of my favorites to meal prep – you can cut everything up in advance and store it in the refrigerator for up to a week.

I make a similar recipe but mix purple and white cabbage. I call it my Rainbow Salad. Red radishes, orange carrots, yellow sweet pepper, green cucumber and peeled broccoli stems, blue borage and chive flowers, purple onion and cabbage. I also add fresh mint and parsley or cilantro/corriander), finely chopped. I always have either black garlic or roasted garlic on hand and add that the vinaigrette dressing. My son in law hates anything creamy but this salad he will eat by the bucket load. I also like mixing it into grains or lentils to make it into a full meal and adding a few tomatoes.
