Homemade Pasta Sauce - Mind Over Munch Episode 2

☀HOMEMADE HEALTHY PASTA SAUCE☀
INGREDIENTS
1 28oz can tomatoes (I used crushed, you can use diced if you'd prefer chunkier)
2 Tbsp garlic
1/2 Tbsp olive oil
1 cup diced onion
1 carrot
1 celery stalk
1/2 tsp salt (optional)
1/2 tsp pepper
1.5 tsp dried oregano
2 Tbsp fresh basil
1 tsp dried basil
1/4 tsp red pepper flakes (optional)
1/4 cup water (optional for consistency)

PROCEDURE
1. In a food processor, puree carrot and celery together. Set aside.
2. In a pot over medium heat, add oil, garlic and onion. Allow to cook for a minute and then add tomatoes.
3. Add remaining ingredients (carrot/celery mixture & seasonings).
4. Adjust seasoning to taste.
5. Cook on medium heat for 5 minutes, and then turn to low and allow to simmer for 20-30 minutes.
6. Add water to reach desired consistency, if necessary.
7. Serve warm!

This recipe yields 16 servings.
NUTRITION per serving (1/4 cup, yields about 4 cups total):
22 calories
3.6g carbs
1.6g sugar
0.4g fat
0g protein

Thanks so much, I really appreciate that! I think the fresh basil adds a nice natural taste, but if you don't have it on hand dried basil will be fine! Give it a whirl!

You could always use fresh tomatoes if you prefer, but it's definitely more work! The canned tomatoes allows your sauce to reduce more quickly/easily. The ones I use have only tomatoes, basil, salt & water as ingredients. You are right, though– many canned foods do have processed ingredients. There are so many varieties of canned products, many of which have no unnatural additives, so be sure to check the labels to see what works for you! Hope this helps!

Ha! I ALSO wish video could convey smell... and taste! I cook with very little salt, & it's almost always optional in my recipes. Canned foods can be high in sodium, so I try to buy low sodium versions. If it's beans or corn, I'll even rinse them off in a colander first. Any salt in this recipe is natural from the ingredients, other than the crushed tomatoes- so your sodium will depend on which tomatoes you buy. I'd check the labels to decide which works for you! Haha I hear you! You could always "dilute" the sugar in the store-bought sauce by mixing it with your homemade until you get rid of it! AND remember that pasta sauce CAN be frozen! Thanks for your support! :)
