Clean - Clean all surfaces you come in contact and sanitize regularly with hot soapy water

Separate - When storing and prepping keep proteins separate from each other and other food items

Cook - Cook food to the appropriately safe temperature (140 Farenheit or above) and make sure it stays at that temperature for at least 3 mnts.

Chill - Chill hot food to the appropriately safe storage temperature of 40 degrees farenheit or below as quickly as possible.

If we are suppose to cook food to 140F how do we figure that out when there is a dial on the stove that just has the numbers 1-8?
