Rosemary, thyme, lavender, honey/soy glaze and perfect roast quail. Thats all you need in life! We are lucky enough to have an endless supply of wild herbs around here. So we foraged as much as we could carry and made the ultimate roast quail platter!

Love your recipe! Looks fantastic to me. I love quail, especially wild quail. Most people don't like that gamey taste, to me it's what makes it quail!😊🎉😊

I'm thinking about raising quail, but I want to taste them first. I found some frozen ones in the local grocery store last week.

This was a good video for ideas as I also have a lot of rosemary in my yard. Not sure if it is wild or if the previous homeowner planted it, but I've definitely been using it in my own cooking. I also have Satsuma (tangerines) and lemons in the yard.

I'm probably going to make a similar glaze, but with honey, lemon juice, Satsuma juice, salt, pepper, and rosemary. Then I'm going to bake them in the oven with some carrots and green beans.

Very nice! I use ginger instead of lavender. And some hot sauce (VERY little).

Fascinating! I lived in Toronto for the longest time. On two occasions I lived just on opposite sides of Greektown on The Danforth. I had every opportunity to try quail any time I wanted to but didn't. I wanted to wait for the great Taste of the Danforth!!! My luck was that there was so much quail, so many people lined up for it, I had not time or place to really get it. When there are three left on the grill and dude in front of you looks hungry, you move along lol.

Is quail gamey? Probably not because everyone wants it. How does it compare to regularly consumed poultry? Did the herbs really infuse the meat? The glaze definitely means business!
