I love genaro, he reminds me so much of my father. The same passion for the food he cooks, being taken through Tuscany and being told to smell the fruits. Brings at tear to my eye.

that is great logic: "everything you can put on top of your pasta, you can put on the inside of the pasta". Y'know, i really want to have him as uncle or grandfather :))

I live in Italy and love Gennaro because although he's serious about food and a magnificent chef, he's not snobby like most Italians. They insist the way their great-grandmother makes a dish is the ONLY way you can do it and every other way is wrong.

Grazie Gennaro ci rendi orgogliosi!

I salivate everytime I watch this man create his masterpieces ! It brings back childhood memories watching my friend's Italian grandmother do her magic in the cucina !

I just made it (if you don't have a pasta machine try to invest in one, they are half price on eBay - given for a wedding present and never used), don't fear the mint, with the butter sauce it mixes very smoothly. Drink a good glass of wine with it to neutralise the favours. Chef Gennaro is sharing hundreds  of years of local food culture with us, thanks man. One word, FANTASTIC!

Gennaro, you are amazing! Thanks for the simple and delicious recipe.
I added crushed cashew nuts (and brazil nut) to the ricota, because I wanted it more crunchy. The cashew nut has a light flavor (different from walnut, hazelnut etc), that's why I chose them. It was my first pasta and it was awesome.

I wish I was there to see him do it live, the hear him talk about it full of passion. Or just to be on that wonderful location. For a brief moment when watching this I was away from all hard things in life. Remember that all good things in life aren't things.

Gennaro infuses his cooking with a passion that is simply infectious! His cooking videos are short, must see tutorials. Bravo!
