How to Prepare Akamu (Ogi or Pap) | Flo Chinyere

You will need:
- Akamu, Ogi or pap (Wet and sour corn starch)
- Water (Hot and Cold)
- Evaporated Milk (eg Peak)
- Sugar (to taste)

How to make akamu/ogi/pap from scratch:

*** Alternatives to Ogi, Akamu or Pap ***

You can use corn flour (corn starch in the USA) to make Pap, Ogi or Akamu but make sure the corn flour is very fine with no chaff whatsoever. It should be as fine as custard powder. The directions in the video will work for corn flour (corn starch) too.

I use Maizena corn flour which I can buy where I live. It tastes so much like the pap we buy in Nigeria. Watch this Agidi video to see what it looks like:

Serve with:
-Fried Yam
-Fried Potatoes etc

Using the guide on the akamu powder pack that I have, to make akamu, and it didn't work out, and then, I watched this video, and read the bio, which says that it works the same way for akamu powder, I said that if I tried it, and it worked, I will come back here to say "thank you " . My dear you are a wonder. I think I've said that before. I just wanted to add that ogi is also good for breast milk production if you are having trouble with that. My mother-in-law put me onto that 33 years ago when my daughter was born a preemie in UCH, Ibadan. It worked...I could have donated if it wasn't taboo back then🤗

I leave the oil to cool down then pour it in a container for another day. I re-use it till I feel it's served its time lol. I keep the oil for frying plantains, potatoes and similar foods in a separate bottle and keep the one for frying say puff puff and chin chin in a separate bottle. Where I live, there are special bins for used oils. We just put it in a plastic bottle and take it there for proper disposal. :)
