for the last tip, there is a quicker option: ctrl + a to select all the note (or select wich ones you want to adjust), in the velocity (below the piano roll) just hold alt + scroll up or down. You also can select notes, hold right click on the velocity to make a perfect scale

By "the control L tool" he means the Legato function. It literally just makes the notes fill their lane until they hit an "end phrase function" aka those little flag markers that show you where the grid starts and ends for that specific.midi channel.
