the trick is, make sure there is completely no air inside the water bag (you can see that he/she holds the bag really tight on the top). When there is no air ==> no air pressure (or no air that push the water flow outside those holes on the bag). And yet, because there is no air pressure inside the bag, but there IS air pressure outside, so this air pressure will push the water INWARD through those holes.
