In Vietnam, we use true free-range chicken, not like in America, where I live. The meat is firm because the chickens are free to roam, and their diet includes nature food, so using them to make soups is the best.

For the “bun cha” you should dip the noodle to the broth and then eat with herb and grill meat, it’s the way we eat.
