Yum! I grew up in Boston, and lived among many Polish and Lithuanian folks. Kielbasa is definitely a favorite of mine!

Danish Rød pølse is a great sausage, some consider it a national dish, and in general sausage consumption in Denmark is quite high you can find "hot dog" stands all over, Vienna sausage Wiener< is another classic sausage example, Lithuanian skilandis protected by TSG, Njeguska kobasica from Montenegro, Kulen produced both in Croatia and Serbia, big list of sausages from Hungary, etc, etc

Since the topic of sausages, I’ve been looking for a sausage I ate when I was young but never able to find it now. It’s like a kielbasa but the difference is that when cooked it’s very light (light brown in colour). The meats inside seem like whiter or leaner cuts of meats too (lots of chunks). Very tame and simple in flavour. I recall it was probably homemade and not manufactured since it didn’t have that acidic preserved tinge to it. It was served in a Kaiser bun. Anybody know the exact name and origin would be greatly appreciated. Sorry if I was vague in my details. I was around 9ish. Oh yeah, recall buying it from a Holland type of deli shop.

Great video, 9:49 is actually not salami but selection of different types of "doctorskaya kolbasa", some sort of mortadella sausage, popular in post soviet countries.

Great, unfortunately it is difficult to find some of these in the US, have to go to Canada to shop it, especially saucisson.

There's like 100 delicious looking recipes in this video: my favorite - hot Italian with peppers & onion. Least fav is kielbasas (sorry) but they're almost just like a hot dog. Hon. mention to the Cajun links
