I am sure that they used the belly. Salmon belly is often trimmed off and many cooks consider it trim (scrap).. it is a succulent selection- having very little connective tissue and high fat content... that is why it was so... tender. (I have cooked a lot of salmon belly.. often trimmed off in a restaurant to make a nice little bit of filet. I used to grill it and make fish tacos..)

Raw salmon with deep fried breading is definitely weird and many say it ruins the fish, but I love it. Wasabi or siracha, soy sauce, and kewpie mayo or katsu sauce and it's godly combo. Nothing beats just plain raw though imo.
