The fact that the game actually has sanity checks for both keeping the train on the rails, and making sure a train exists, is amazing.
Something critical must be tied to the train's code, if the game freezes before adding in a new train.

During the "Clucking Bell" Heist, you must steal the train. You gave full control of the train, In fact the train is stopped before you get in it.
You can press shift to break and stop the train.
