California vegetarian simpleton. I really like to heat up a can of refried pinto beans and add cooked rice, onion, garlic, and habanero. Topped with guacamole. Probably because I live so close to Mexico lol

I eat blackeye peas w/ rice & it is a staple in Africa American culture on New Years Day along w/ greens. My Dad would mix collard greens w/ mustard greens & the best fried chicken.

Hello from Switzerland. I especially like chickpeas, and also like preparing Dahl, mainly from Red lentils, Tor Dahl and Chana Dal. Normally with Basmati rice and / or Roti (using whole meal Atta). However now that I recently switched to Low Carb Nutrition and eat even more Pulses and lentils, I try to replace Basmati Rice with alternatives that have lower Glyx indexes, such as Quinoa or Buckwheat. Does this combination also work ?

In West Virginia we eat pinto beans with cornbread. To make the pinto beans more delicious, cook them with a smoked ham hock on very low heat until they are creamy in texture but not turning into mush and the broth is thick. You can also cook them with a small finely diced onion. So yummy!
