The difference between Childe's and Signora's theme is that Childe incorporates Liyue instruments into his theme before dropping the Snezhnayan orchestra, as a sign of 1) him being a major character during the Liyue Chapter, 2) him having lived in Liyue for a while and eventually taking a liking to its culture (or just the chopsticks), and 3) him being a playful jerk and not taking the fight seriously until he got jebaited/trolled by Signora and Morax.

Signora is nothing like that. Both of her phases mainly use Mondstadt instruments, among which is the piano, before finally releasing the Snezhnayan choir in the second phase. This hints at two things: 1) She doesn't give two shits about Inazuma besides taking the Archon's Gnosis, and 2) She is still a Mondstadter at heart; joining the Fatui only serves as a shackle to subdue the ever-raging flames within her, the (very personal) flames of resentment towards Barbatos for indirectly killing her lover.

The fact that Childe's bossfight theme is an Electro Tango makes it even more awesome, as an argentinian I understood the reference.
Tango is an extremely private dance between two people trying to match each other's steps, you need to learn the steps perfectly to be on the same level as your partner and not fall, it's so passionate and intimate.
Such a subtle yet perfect detail taking into account that Childe became obsessed with the traveller to the point where he wants to fight them everytime, learn their movements and become stronger. Just ugh, amazing, I love Electro Tango and this song giving me big Bajofondo Tango Club / Gotan Project vibes is perfect.

6:26 and beyond gives me utter chills. the ticking sounds signifying how childe can’t use foul legacy for too long or he’ll die- the fully sneznhayan winter-like theme fully contrasting the cheerful-liyue touched beginning of his theme… the subdued whimsical tone… just wow.

New genshin players won't know about when this boss was first released and Mihoyo had to nerf him less than a week later in the story quest. Also there was no Zhongli at the time and most people was still AR45.
