I was so excited to try out a recipe from Tabitha Brown's cookbook Cooking From The Spirit. I was craving stuffed peppers and she had the perfect quick and easy recipe. Grab a screenshot of the recipe from the video but here are the ingredients.

Shopping List:
EVOO
Peppers (whichever color you prefer)
Vegan Sausage (used Field Roast Apple & Sage)
Mushrooms
Fresh Spinach
Tomato
Purple Onion
Garlic
Vegan cheddar cheese
Sliced black olives

Optional Toppings:
Avocado (used guacamole )
Pico de Gallo
Sea Salt
Black Pepper

That’s very interesting that the recipe does not have measurements.

I’m curious about the olive oil gadget you used to spread the oil onto the pan. Where can I find? I knew the meal was good because you didn’t hesitate or do that little baby smack smack smack as if trying to decide if your tastebuds liked what it just met with as seen in some of your other “buy to try” segments. I’m glad this recipe was a keeper/winner. I’m definitely going to try a version!
