Recipe (Makes about 8, 1/4 cup acorn pancakes)

(Dry Ingredients)

- 1/2 cup acorn flour
- 1/2 cup all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp kosher salt
- 1/2 tbsp sugar

(Wet Ingredients)

- 1 egg
- 3/4 cup buttermilk
- 1/2 cup sour-cream
- 2 tablespoons melted unsalted butter

Combine all dry ingredients. Next, melt butter. Ensure the butter is warm, not hot. Add in the egg and whisk it with the butter. Next, add the sour cream and buttermilk, mixing until combined.

Pour the wet ingredients into the dry and begin to mix them. DO NOT over-mix. I mix mine until I don’t see any dry flour anymore. If there are still lumps, that is fine.

Heat a pan or griddle (my experiments were conducted with the pan at around 400 degrees). Melt some butter or oil to coat the pan. Pour your batter in 1/4 cup amounts onto the pan. In my testing, I cooked each side for 2.5 minutes.

Take your pancakes off the heat and let them rest for about a minute to carry-over-cook, preferably on a wire rack. Next, top with your favorite ingredients (like hickory syrup) and enjoy!

I find acorn pancakes a little more moist and a little less fluffy than traditional straight-wheat pancakes.

If your pancakes turned out too dense, there are a couple of culprits. One, the batter could be too wet or over-mixed. I also found that if I waited too long after I had combined the wet and dry ingredients, they would turn out flatter. The earlier cooked, the better!

You could probably forgo any wheat flour if you whip your eggs to near stiff peaks and fold the acorn flour in. The best way is mix 1/4 of the acorn and 1/4 of the egg, then fold in another 1/4 of each, then 1 more quarter, and fold the last of the eggs in. Keeps it as airy as possible.

Love the video. For fluffier pancakes, I suggest using the style of egg preparation that is used in japanese pancakes. The egg whites are frothy and then folded in which maintains the airpockets

How do these acorn pancakes taste versus regular all purpose flour pancakes? I imagine the acorns would give them a grittier texture with more nutty flavor but I’ve never had acorn flour so don’t know. Thoughts?

I am gluten free and it’s so expensive to buy gluten-free flowers at the stores; So I’m interested in making acorn flour.
I also am interested in foraging because food is getting really expensive and with all of my food allergies I’m going to have to start turning to nature

Keep the syrup in a small bowl and dip the pancakes in before eating that way the pancakes will never go soggy

I definitely paused the video and googled "grove syrup" to confirm what kind of syrup you used. Cause i would have been HORRIFIED if it wasn't real maple syrup.
