5 Essential Pieces of Equipment for the Beginner Baker

Double Chocolate Blondies (yield: quarter sheet pan/13in x 9in pan)
1.5 c (320g) brown sugar
2 tbsp (14g) milk powder, toasted
2 eggs
6 oz (170g) butter, melted
1 Tbsp (14g) vanilla
1.5 c (210g) AP flour
1 tsp (4g) baking powder
1 tsp (6g) fine salt
4 oz (113g) milk chocolate, chopped
4 oz (113g) dark chocolate, chopped

1. Combine brown sugar, toasted milk powder, eggs, and vanilla. Whisk until thoroughly combined.
2. Add the melted butter and mix until fully incorporated.
3. Add in the flour, baking powder, and salt, mixing just until no dry flour remains.
4. Fold in the chopped chocolate and spread into a quarter sheet pan or 13in x 9in pan lined with parchment paper.
5. Bake at 350F for 18-23 minutes or until golden brown.

Toasted Milk Powder
1. Spread milk powder in a thin layer on a baking sheet lined with parchment.
2. Bake at 300F for 5-10 min or until a light golden color.

my classics a level teacher can measure grams by eye, and whilst it doesn't seem like much, the most impressive part of my school trip to hadrian's wall was me getting upset since we didn't have scales so i couldn't make pancakes and him getting out the flour and asking me "how much do you need? i can weigh by eye". the pancakes were beautiful.

One thanksgiving, I was making mashed potatoes and was using a rubber spatula. After a good stir, I pulled it out and saw the spatula had broke off. I spent a long time trying to find the 1.5 inch long chunk to no avail. I made a game of it; whoever finds the spatula chunk wins. My mother found it on her plate 😅😂

I would also mention, don’t just get silicon wisks, Ik I did because the price is cheap, but a lot of the time they’re too weak and flexible to whisk anything but thinner liquids, get a nice sturdy metal one that doesn’t flex as much for those thicker mixtures

So far baking taught me that parchment paper is for specifc baked goods, but cookies usually never need them... Butter and foil or if the pan is clean enough still i like using nothing to get the roasty flavor that comes from the heat and steel. I try to keep cast irons around but theyre harder to clean

something else everyone should have is a flat baking sheet with a lip on one edge. this is very useful for sliding under breads, cakes, cookies, anything in the oven and getting it out on a stable surface.

Not even kidding, I have all of these but the first video of yours that I saw, I spotted a piece of equipment I don't have.... And that is, sheet pans. Of different sizes, metal is the way to go when you can, because it's durable and easy to clean

Not sure if you know this recipe, but my dad used to make it for me and I want to do it now but I want them to be as best as they can be. It's these red velvet cookie that are stuffed with cheesecake and sprinkled with powdered sugar. I've noticed they sometimes had the cheesecake bit poking out on the underside.
