Persian Shishlik (Grilled Lamb Chop) - Cooking with Yousef

Happy New Year my dear friends! Wishing you all health & happiness in 2021 -

Today, we prepare one of favorite all-time dishes, "Shishlik" (or Shish Leek) which is Lamb Chop Kabab, or Grilled Lamb Chop. This is prepared similarly in many other countries, with regional differences.

Ingredients:
2 Rack of Lamb, Frenched
3 Onions
1 1/2 Teaspoon Salt
1 Teaspoon Black Pepper
1/4 Teaspoon Garlic
8-10 Tablespoon Cooking Oil
4 Tablespoon Lime or Lemon Juice
Liquid Saffron
4 Tablespoon Yogurt

Separate:
Butter Sauce for Grilling (butter, lime or lemon juice, salt & pepper)
Tomatoes for Grilling
Anaheim Peppers for Grilling (or other preferred vegetables)

Looks yummy! To make it the spices evenly distributed I like to mix together the dry ingredients in a small bowl then put everything on the meat

Superb! Thank you Yousef! Very soon spring lamb will be available in the UK, and I will try this delicious dish. Two questions Ustad Yousef. Please give a link to a previously described recipe, or if this is absent then please give a recipe for liquid zafran. Also, instead of using grated onion and then having to discard it before grilling, can we puree the onion in a blender, squeeze out its juice and use the juice instead of the grated onion?

While this is great recipe and looks beautiful, it is also very laborious work the marinating process. However, I have another comment about Yusuf’s long sleeve shirt while preparing all this messy process. Can’t you just fold your sleeves up so you don’t dip them in the marinade. Also don’t you believe in using an apron?
