You're not using the right dock. Nintendo-specific docks tend to not work well with other devices. You'll need a portable monitor that does video output with a usb-c cable. I tried it earlier with my friend's iPhone 15 and it worked flawlessly.

Hey hopefully you read this but do me a favor do it again but on the original Nintendo switch dock and then unlock the iPhone you have to unlock the iPhone to mirror it
