Go to home screen and dock..open...go to multitasking...Why do I only see 2 things..."allow multiple apps" and "gestures"....I'm running 14.0.1 with 6th Gen

I have an iPadOS 15.5 and it has a different home screen and dock. I'm not seeing any multitasking feature.

But I want to know how to get just one app on my screen. I don’t know what I’m doing but every now & then while I’m watching You Tube or checking my mail, suddenly chrome pops up on the right side and I can’t figure out how to get rid of it! Then, each time I click on chrome, I get that little chrome screen on my right. So small I can’t see the full screen so I want to know how the heck to stop this from happening or when it does, how to get it gone! Any suggestions for this not so tech granny? ☺️
