These cookies have a very interesting and delicious flavor and texture I just love to snack on them!

For about 6 cookies (you can double the recipe)
Rice flour: 1/4 cup
Oats: 1/4 cup
Baking soda: 1/8 cup
Soft butter: 2 tbsp (or coconut oil)
Peanut butter: 1 tbsp
Honey: 1 tbsp (or maple syrup, molasses, grape molasses…)
Ginger, cinnamon and all spice: 1/4 tsp of each
Salt and vanilla

Preheat the oven to 180C. Just mix everything and chill the dough for a little (you can skip this part) then bake for 8 minutes.
Enjoy!
