Peach Mousse Cake

Vanilla Biscuit:
- egg 1 pc;
- sugar 25 gr;
- flour 25 gr;
- a pinch of salt;
- baking powder 0.5 tsp;
- starch 10 gr.
Bake in a ring of 16 cm.

Peach layer:
- peach puree 250 gr;
- Sugar 2 tablespoons;
- water 40 ml;
- gelatin 8 gr.
Pour into the ring 16 cm.

Mousse:
- Mascarpone 250 gr;
- cream of 33% 300 ml
- sugar 50 g;
- 3 yolks;
- gelatin 7 g;
- water 35 ml.

Whipped Cream 33% for decor 150 ml.
