30 Minute Broccoli Cheddar Soup (Better than Panera!)

🥦 Healthy broccoli cheddar soup packed with carrots, broccoli, garlic, and cheese. This creamy velvety soup is much better than Panera's broccoli cheddar soup and can be made in under 30 minutes for a fraction of the price! 🥕🧀

Ingredients

4 tablespoons butter ½ stick
½ medium onion chopped
2-3 cloves garlic minced
4 tablespoon AP flour
2 cups low sodium chicken or vegetable stock
1 tsp kosher salt
½ tsp black pepper
¼ tsp or ground nutmeg, optional
3 cups broccoli florets or 1 large head, cut into small pieces
1 large carrot grated, julienned or finely chopped
2 cups half & half or milk or light or heavy cream
8 oz block grated cheddar cheese or 2 cups (mild, medium, or sharp )

Melt butter in a large dutch oven or pot over medium-high heat. Add the onion and cook 3-4 minutes or until softened and light gold. Add the garlic and saute for another minute.
Add flour and whisk for 1-2 minutes or until the flour begins to turn golden in color. Pour in the chicken stock, broccoli florets, carrots, and seasoning. Bring to a boil then reduce heat to medium-low and simmer for 15 minutes or until the broccoli and carrots are cooked through.

Stir in half & half and cheddar cheese and simmer for another minute. Taste and adjust seasoning if needed.

Serve with toasted crusty bread or in a bread bowl if desired.

I added chicken to the recipe and now my family wont stop asking me to make soup! I am now known as the soup woman. I have received cooking books for Christmas in an attempt to coerce the modified recipe from me as an exchange. Thank you for this new found power.

I doubled the garlic, added two chicken breasts, pre cooked in a skillet over medium high heat in butter, salt, and pepper until browned and added with the cheese stage.
I also added an extra cup of broth (bone broth) and i cooked a thinly chopped rib of celery with the onion.
I recommend pairing this with sour dough toast. You can do it. Become the soup man/woman of your family. Become the soup person of your dreams

I just made this and it’s arguably better than Panera and I didn’t even have the onion. My boyfriend who doesn’t even like this type of soup had two bowls. I’m not great at cooking but I felt so accomplished lol. Never going to buy broccoli cheddar soup from Panera again!! Delicious

Broccoli stems are so tender if you peel them, don't throw them away. I wish people knew this so stores would not cut them, same with cilantro stems, they are edible. Great video! And thank you to all who have shared how they made it there own, lots of suggestions/choices, they all sound so good!

Made this for dinner tonight! Came out amazing! However, my recommendations would be to add 1 full med size onion (instead of half an onion), 3-4 carrots (I added 2 and it still wasn't enough for my liking), possibly double the paprika and add a handful of extra cheese ! I also added extra chicken stock.
We had it with French baguettes for that "authentic panera bread style" and it was amazing! Thanks for the recipe!

Made this at 1 am lol. I just tasted it and it is yummy. I like that it's simple and avoids a lot of unnecessary ingredients. Thank you 🙏🏾 Now to deliver it to my cousin who is recovering from surgery.

I literally just made this and it was amazing! I made some modifications to the recipe though. I used one full medium onion, two potatoes, one broccoli, added some mushrooms, and two cups of chicken broth. Instead of using half and half, I used one cup of milk. And topped it off with some shredded cheddar. It was just nice and to my taste.

I really enjoyed this recipe. I made it tonight and I was very pleased with the taste of the broccoli soup. I doubled the veggies (onions and carrots), and added heavy cream and parmesan cheese. This is a keeper.

I add a dash of nutmeg and it brings it to a whole new level. I know it sounds crazy, but it adds a bit of complexity to the cheese. 🥰

I made this tonight and it was absolutely delicious. This was the best recipe I’ve found so far. What I like most about it is it’s easy to tweak and turns out perfect for your taste needs. I added a little cayenne pepper for more season. Split the half and half with heavy cream for thicker texture and split the mild with sharp cheddar for taste. This is a recipe to write down in the book. Thank you. 😊❤

When I make this recipe, I double up on my ingredients and I blanch the brocoli first then add it to the soup. It comes out delicious everytime! 😊

I made this and it came out great!! I used chicken broth since I didn’t have vegetable broth. Next time though I will use half a cup of more cheese and carrots. But, I still love this recipe.

I took your delicious recipe and made it into a dinner by adding cauliflower, chopping the carrots into small chunks and adding cooked chunked chicken and serving with croissant rolls for dipping. It was delicious! Thank you!

A tip I learned: bagged shredded cheese has something added to keep it from sticking together and also makes it not melt as creamy.
Buy block cheese and shred it yourself for the best results! 🧅🥦🥕🧀
