One time, my dad wrapped a whole head of cauliflower in foil and put it on the grill. He forgot about it for like an hour... When he unwrapped it, it was not totally burnt, but instead brown and caramelized and very very soft. He and 2 of my step sisters stood around it with forks, just going to town on it, while the other one watched in disgust (I wasn't there, but I was told the tale).

The easy way of boiling the romanescu is to cook it like cauliflower.

Put it into a kette and cover in cold water from the spring. When the water is boiling (you can wait a minute), remove it to a platter. The residual heat will cook it so that it is ready for the broiler.

This avoids overcooking.

I’d set them in a pot of water that rises just past the stem and do a quick steam then finish in the oven to brown the outside

I do not want to need a microwave. Maybe halve or quarter it (to roast stem-side up)?

I don't own a microwave, and I never will. I prefer to separate the stem and pan roast the stem in butter and the florets blanched, then broil roasted with pork fat & finished with S/P.
