Oreo Snowskin Mooncake

Who would have guessed that our favorite cookies and cream cheesecake would go so well in a mooncake?!? This traditional-looking snowskin mooncake hides an uncoventional mix of crunchy Oreo cookies and smooth cream cheese, it's like a cheesecake in disguise! Just made this and its so good, better than the expensive ones i bought last year, and its getting really hard to find oreo flavour now so i decided to make it myself. But i have to add it took me 120ml of hot water, 80 is too little and the dough wont form completely.

I didn’t have premix dough, so I used fried tapioca flour, not really happy with the dough texture, abit grainy... any advise?
