The peel is a delicacy. My mom used to make it into dish, and it tastes so good, it's like a cross between stewed pork and citrius. But the preparation is time consuming, can easily spoiled if not careful.

In syria we make into a jam, we cut it into pieces and put it in water for two days changing the water every 6 hours.
Then we boil it, adding sugar syrup and boils it with it
