Café Gabe’s Birthday Quiche
When it’s your birthday, you make what you want. And this is it! Six months late and STILL DELICIOUS
Café Gabe’s Birthday Quiche
For the Crust:
Butter: One Stick Frozen (1/2 Cup)
Flour: Two Cups {plus more for flouring surface/adding additional to dough if needed)
Sugar: Two Tablespoons
Smoked Salt: One Teaspoon
Paprika: One Teaspoon
Black Pepper: One Teaspoon
Garlic Powder: ½ Teaspoon
Baking Powder: One Tablespoon
Heavy Cream: ½ Cup (plus two tablespoons for brushing)
Egg: One Large
For the Filling:
Whole egg: 3 large
Egg White: 3 large
Turkey Sausage: 1 cup cooked
Cream: 1/2 cup
Cheddar Cheese: ½ cup
Salt: 1 tsp
Black Pepper; 1 tsp
Instructions:
For the Crust:
Mix dry ingredients together in a large bowl and mix.
Using a grater, grate frozen butter overtop the flour mixture.
Using a pastry cutter, two forks, or fingers, mix in butter until pea-sized crumbs form.
Whisk together liquid ingredients, and pour slowly in two to three additions to the flour-butter mixture.
Mix slowly.
Flour work surface, and pour bowl onto surface and begin kneading. If dough is sticking badly, add flour in one tablespoon additions.
Wrap finished dough in plastic wrap and place in fridge while preparing remaining ingredients.
(The crust can be done as far in advance as a day.)
Once ready to bake:
Preheat oven to 350F
On a lightly floured work surface, roll out crust and place in your pie dish/spring form pan.
Blind-bake crust for 20 minutes.
Prepare filling while crust blind bakes.
For the Filling:
Place a skillet over medium high heat.
Once hot, add oil and fully cook turkey sausage.
Set aside.
In a large bowl, whisk together eggs, egg whites and cream.
Add grated cheese, salt, and pepper, and whisk again.
Add turkey sausage and whisk one final time.
When done, remove Crust from Oven and increase Oven to 375 degrees.
Pour into egg mix into crust, and place back into oven.
Bake at 375 for 30 minutes. Test doneness with a toothpick.
Remove from oven and allow to cool for 10 minutes.
Slice, serve, and Enjoy!
