Always cut perpendicular to the bone or “right down the middle.” Those end pieces always are going to be a little more cooked so to get the true temperature, do it right down the middle

I order this every time I go there. Not that it's often maybe 3 times. But it is spectacular.

Last night, we had a good time with another couple. I paid the bill: steak x 2; mashed potatoes x 2; Brussels sprouts; chicken; salmon; 4 whiskey; 2 espresso martini; Caesar salad; and free bread = $656 with 20% tip…never again!

I ordered it once. I am with my significant other.
It was more than we eat. Especially after appetizer, soups and salads. So we took the left over home for our dogs. Once we got home we opened up the tin foil it was wrapped in the smell of rotten meat permeated the air. Never will we ever eat there again! It was served hot so we could not detect the over aged putrid meat. The inside of the meat was way over shelf life. Needless to say I did not even give it to my dogs. I took it out of the house and into the garbage can. Fyi we only finished 1/3 of it.

Cowboy Steak, or Kansas City cut, is nothing to write about in Chicago. While not bad, you can get better steak elsewhere tor that price. Just go to a few more steakhouses, and you will know.
