800 V fallacy. Charging speed of the smaller (<90 kWh) batteries depends mostly on the size, and secondary on chemistry, charging curve, long reliability strategy, and temperature management - not on the bulk voltage. The voltage gain is mostly for a charger construction - less cooled charging plug, cables, and electronics.
For bigger batteries (CT, other trucks, big inefficient SUVs, semis) the maximum charging speed can be bigger e.g. > 200 kW - and only then can the so-called 350 kW chargers be useful with 800 V.
Please note that these "high-speed chargers" can only provide 180 kW on 400 V, which is still too much for most smaller EVs. One exception is Tesla, which offers a short-term 250 kW charging of the top Model 3/Ys.
So, the 800 V architecture is not needed at all for the general populace with average-sized EVs. Only a minimal number of big luxury cars can benefit from it.

With 800 V there is no practical gain in efficiency, over 400 V cars. Again, other factors are more important.
And 800 V electronics are more expensive now - an essential factor for a popular affordable car.
