For those who are curious about 8:59,
Lactic acid is fermented with ammonium salts, to obtain nitrogen.
Here, ammonium salts acts as a source of nitrogen.
In our textbook, this part is not mentioned. Hope my answer is satisfied your curiosity 🙂

Sir Lactic acid is used as a Nitrogen removal from the waste proteinous substance that's why it is called as source of Nitrogen. 🙏🙏Plss give me heart❤

Amino acids -
1)Amino acids are the building blocks for proteins.
2) Different combination of amino acids make different proteins.
3) Amino acids when joined to each other forms peptide bond in between which forms long chain of amino acids forming protein.
