🍪 THE MOST AMAZING Apple Crumble Cookies 🍎 WHO WANTS SOME??

Can't choose between cookies or apple crumble? Now you don't have to! These vegan Apple Crumble Cookies are the perfect comfort treat that'll have everyone asking for the recipe! 👇

⏲️ Prep: 25-30 min | Bake: 12-15 min

🛒 INGREDIENTS:

Cookie dough:
• 250g plain flour
• 1 tsp baking powder
• ½ tsp baking soda + salt
• 1 tsp cinnamon
• ¼ tsp nutmeg
• 55g melted coconut oil
• 150g brown sugar
• 60ml applesauce
• 1 tsp vanilla

Filling:
• 1 large apple, diced
• 1 tbsp coconut oil
• ½ lemon juice

1/2 tsp cinnamon

Crumble:
• 60g flour
• 25g oats
• 50g brown sugar
• ½ tsp cinnamon
• 50-60g solid coconut oil

Glaze:
• 120g powdered sugar
• 2 tsp plant milk
• 1-2 tsp lemon juice

👩‍🍳 STEPS:

1. Heat 350°F/175°C
2. Mix dry + wet ingredients separately, combine (don't overmix!)
3. Cook diced apple with oil + lemon until soft
4. Make crumble: mix dry ingredients + squish in cold coconut oil
5. Form cookies, make dent, fill with apple + crumble
6. Bake 12-15 mins
7. Cool + drizzle glaze
