I'm a drumer for almost 36 years, but I personally use the same technique as you, very nice my friend.

When you tune both the same (same heads), you get the longest sustain and loudest tone of the drum. If you tune one head higher, you shorten the sustain of the drum.
Most drummer i knwo, tune the reso head a bit higher than the batter head.
I tune my snares and tomtoms batter head higher than the reso, and the floor toms kick drum the batter lower thean the reso. That´s individual. If you like the sound, it´s a good sound!

I followed this as i have an export kit also but for some reason following the 1 turn and half turn then fine tuning from there.. my toms sound way to high.. I understand the fine tuning should change that but i still dont seem to get the nice sound even close to yours in this video. I guess having mics and editing a video could also make a kit sound better or different.
In all i appreciate this video though as it did help me to get a better understanding of tuning a drum kit

I think it matters what kind of head you have on the resonant side. The thicker the resonant head, the less the sound will vibrate, the thinner the more it will. That is also affected by how much higher or lower in pitch/note value you tune the drum. Either you get a pitch bend or fall.

Coated gives less resonance and more warmth while clear is more resonance and a brighter tone. Unless its like a pinstripe or EC2. They give lower tones and reduce resonance. But they also are available in coated.

Really good instructional vid.
If I may add, you should inspect the drum edge for any burrs or nicks and sand down if needed,
Also, I take a block of paraffin wax and rub around the drum edge, it helps to lube the head and helps with tuning.
