BETTER THAN TAKEOUT - Easy Chicken Lo Mein Recipe
Prep time: 5 minutes
Cook time: 10 minutes
Serves: 4 people
Ingredients to make Lo Mein Noodles
To make the Lo Mein sauce
• 2 tsp Vegetarian oyster sauce or use dark soy sauce
• 1 tsp light soy sauce • 1 tsp sesame oil (or olive oil)
• 1 tsp vinegar
• 1 tsp Sriracha add more if you prefer spicy
• 1 tsp tomato sauce
• 1/2 tsp black pepper powder
• salt to taste
• 1 tsp sugar
• 1/2 tsp cornflour (optional)
• 1/4 cup water/vegetable broth
To cook noodles
• 6 cups water
• Salt to taste
• 160-gram noodles (wheat noodles)
To make Lo Mein noodles
• 1/4 cup sliced spring onion whites
• 1/2 tsp ginger, grated or use paste
• 1 tsp finely chopped garlic
• 1/2 cup chopped button mushroom
• half red bell pepper, sliced
• 1 carrot
• half green bell pepper
• 1/4 cup cabbage
• 2 tbsp spring onion greens
Step by step instructions to make Vegetable Lo Mein
1. Combine all the ingredients mentioned under the Lo Mein sauce. Set it aside.
2. Cook the noodles as per the instructions given on the package. Drain it on a colander. Add 2 tsp oil. Set it aside.
3. Heat 1 tsp oil over medium heat.
4. Add spring onion whites, ginger paste, garlic, and button mushrooms. Stir-fry for 3-4 minutes.
5. Add red bell pepper, carrot, green bell pepper, and cabbage. Stir-fry until vegetables are soft but still crunchy.
6. Add cooked noodles & sauce mix to it.
7. Combine everything well. Make sure noodles are coated well with the sauce.
8. Garnish with spring onion greens.
9. Serve Veg Lo Mein hot and enjoy!

Cooking tips:
Stir-fry the vegetables so that they are soft but still remain crunchy. Cook noodles until al dente.
For best flavor use sesame oil. But you can substitute it with olive oil too. '
