_(Aside: That's a "Tombow Mono Zero" eraser he's using. @__9:24__. Stop asking.)_
You're not using it to "undo" what you shaded in pencil, you are using it to _draw_ strands of highlights into the fur. Without it, the highlights are defined by negative space _between_ your strokes and are impossible to keep consistent -- which is why it's so easy for beginners to get it wrong. Using an eraser to reinforce that negative space with intentionality is what you're missing.
