Guyanese cheese pie/ quiche

filling

5 eggs
1/2 cup heavy cream
2/3 cup evaporated milk
1/2 tsp seasoned salt
1 tsp complete seasoning
1/2 tsp black pepper
1 tsp garlic powder
1 tsp mustard
Finely chopped green onions
Finely chopped red sweet peppers
3 cups gouda cheese

pastry dough

1 1/2 cups all purpose flour
1/2 cup butter flavor shortening
1 tsp salt
1 tsp sugar
1/2 cup water or more if needed

This is traditionally made with "yellow cheese"...cheddar cheese.
We make everything with cheddar. It was/ is a English/ British thing.

But Edam, (dont know if Gouda was) imported to Surinam form Holland, and was available in Berbice, and it was mostly a Christmas treat, not something you would cook with as it was too expensive.

Even today Real Edam and Gouda is a lot more expensive in the U.S and Canada than cheddar.
