Heart-Healthy Three Bean Salad Recipe

A tasty and nutritious heart-healthy recipe that's easy to meal prep!
Ingredients:
Salad
2 cups cucumber, diced
2 cups celery, diced (about 3 celery stalks)
1 red bell pepper, diced (about 1 cup)
½ cup red onion, diced
1 15.5 oz can cannellini beans, drained and rinsed
1 15.5 oz can kidney beans, drained and rinsed
1 15.5 oz can chickpeas, drained and rinsed
½ cup fresh parsley, chopped
¼ cup fresh mint, chopped
Dressing
¼ cup extra virgin olive oil
¼ cup apple cider vinegar
2 tbsp lemon juice (juice from about 1 lemon)
2 tsp dijon mustard
3 cloves garlic, minced
1 tsp sea salt
½ tsp ground pepper
Instructions:
- Add all salad ingredients to a large mixing or serving bowl. If using canned beans, make sure to pat dry after rinsing to prevent excess liquid in the salad.
- Combine all the salad dressing ingredients in a small bowl and whisk to combine.
- Add the dressing to the salad and gently toss to distribute the dressing.
- Store leftovers in an airtight container in the fridge.
