So I decided to take one of these amazing tri-tips from Snake River Farms and smoke it up brisket-style!

Here is the ingredients for my tri-tip rub:
2 tbls. smoked pepper
2 tbls. regular pepper
8 tea. garlic salt
4 tea. dry mustard
4 tea. paprika
1 tea cayenne pepper

Just curious. I've seen many ppl take this to an internal temp of 130-140 and take it off the smoker and then rest. (Professional BBQ pit masters) whats the reasoning for taking it to 200+ degrees internally? Not knocking you or trying to debate. Im simply curious. It looked very good otherwise.
