Coconut cream and milk.
I tend to use a brown coconut to get the flesh (discart the water) but use a drinking coconut to use its water to mix and squeese the ground coconut flesh with.

I feel the coconutwater after skimming the cream tastes so much better. If drinking or for marinade or putting into curry if too thick.

My green curry only came out tasting right after I had watched a few of your curry videos. Previously I had been drowning the paste in coconut. These curry videos are an invaluable supplement to your book "Thai Food"... Although I think it'll be a while before I can add quite as many scuds as you do!

In the recipe book he says cook beef for 20 mins. Surely it takes longer than this, David???
