As other people have pointed out her later opponents are wearing actual armor, on top of this it's probably also her just getting better at fighting and using her middle knuckle rather than her fingertip is less dangerous to herself in the long run as well as more effective. Using her knuckle rather than fingertip means that she's less likely to accidentally jam her finger and her knuckle is harder than her finger tip, so she's essentially learned what middleschoolers which is how to dead leg someone.

You'll also notice if you look closely that she's slightly extending her index finger's middle knuckle forward slightly, so while still using a closed fist for the attacks, she's still placing the most power on the pressure point, not the whole area she's hitting.

I still love the theory that Ty Lee is a descendant of Air Nomads. Eye color, facial structure, heavy focus on chi and balance. It all makes sense when you dig deep into it.

I like how in the earlier fights, like with Sokka, she’s also sparing in her attacks. She pauses after a block, almost as if she’s hoping that one block would be enough for her opponent to give up. In later depictions, she keeps going continuously, not seeming to care if she could’ve gotten by with fewer blows.
