I can’t believe I hadn’t tried these delicious egg puffs while I was in Mumbai (so I am not really sure if you get them there). But man am I lucky to have tried them eventually! This is an absolutely awesome, quick and easy snack for an egg lover like me. Popularly known as Kerela or Mangalore egg puff it is soo easy to make especially if you have frozen puff pastries with you handy.

Ingredients I used:
- 4 eggs, boiled and halved lengthwise
- switz puff pastry sheets
- oil for greasing

For masala:
- 1 tablespoon oil
- 2 medium sized onions
- 2 green chillies
- 1 tsp ginger garlic paste
- 1/4 tsp turmeric powder
- 1/4 tsp red chilly powder
- 1/4 tsp garam masala
- 1/4 tsp coriander powder
- 1/4 tsp pepper powder
- 1 tsp or little more chicken masala
- salt to taste

Procedure:
- Hard boil the eggs
- In the meanwhile, prepare masala by frying onions, ginger garlic paste, green chillies and all the spices together till onion turns golden brown
- Stuff the puff pastry sheets with masala and put egg on top (try to stuff masala under the egg and sheets so that it doesn’t burn if exposed)
- Bake them in pre heated oven at 200C for around 15 mins. I put 3 at a time, if you are putting fewer or more the cooking time might change accordingly.
