Q: But why does my cheese come wrapped in plastic at the grocery store?

A: Grocery store cheese comes wrapped in thick [Vacuum Sealed] plastic for several reasons: Food safety regulations, it slows down the aging process so the cheese lasts longer, hygiene and safety, so it's easy to transport, so they can print labels and information on the product. You can take the cheese out of the vacuum sealed plastic and follow the instructions in this video to continue aging your cheese and enhance the flavor by letting a little air circulate around it.

In many cold-weather countries, people leave their cheeses wrapped or covered in cloth in a cold cellar, garage, or basement where the cool temperature keeps the cheese for a long time. Cheese has been around a lot longer than modern refrigerators!

Q: I tried this, why did my cheese get hard and dry?

A: Your refrigerator acts as a food dehydrator by removing moisture. The reason most refrigerators have drawers, is that the drawers slow down the dehydration process. Once you wrap and/or cover your cheese, you MUST put it inside of a drawer to slow down the rate at which your refrigerator dehydrates foods. Also, if your refrigerator is too warm, food will dehydrate faster. The ideal refrigerator temperature for preserving food freshness (and thus reducing dehydration) is between 35°F and 38°F (1.7°C to 3.3°C).

If your refrigerator tends to dehydrate your food too quickly, it is recommended that you wrap your cheese in parchment paper instead of simply covering it with a cloth, or you can do BOTH.

Q: Can't I just wrap my cheese in tin foil?

A: Yes, but make sure that some air can get in and out of it. You don't want to trap too much moisture.

Q: Won't strong-smelling cheeses change the flavor of the other cheeses?

A: Some strong-smelling cheese like blue cheese, for example, give off ammonia and other strong odors. If you find that your cheese is so strong that it is actually changing the flavors of the other cheeses, then simply wrap it in parchment paper and store it separately, away from the other cheeses. There is no law that says you have to store your cheeses together if you don't want to :)

Q: My cheese got too hard in the fridge!

A: Hard cheese is excellent for grating and adding to dishes for melting (like in cooking or on a pizza or in tacos or a fondue or adding to a salad, etc.) and thus you can still utilize the cheese effectively.

You can also just carefully slice off the thin outer hard part and still enjoy the rest of your cheese.

Q: Why can't we just use cheese cloth?

A: The purpose of cheesecloth is to separate liquids from solids in the cheese making process of soft cheeses like ricotta and mozzarella. It acts as a strainer, separating the solids from the whey. The main purpose of cheese cloth is not for wrapping and storing cheese.

Heres a tip for you, if you buy cheese, if it is a type of cheese that takes a while to use up and tends to mold before it gets used. You can use a paper towel and lightly moisten the towel with white vinegar, just moisten the paper towel, not soaking wet. Wrap your cheese in it, and store it like that your choice zip lock or parchment paper. The vinegar keeps the cheese from molding. This works great, and it doesn't impart any of the vinegar taste. And saves you money.

I've been putting cheese in plastic bags for close to 70 years. I always thought that cheese should last should last longer than it has. I'll try your tip. Video is well done! You didn't try to drag it out, just got to the point.

Hey, I’m 84 & years ago we went through a lot of cheese / never a problem as it never lasted very long. Now today, a senior living alone, I’ve been throwing out a lot. This is great idea for me - just reset my cheese tray in fridge. Thanks so much for the great tip!!🇨🇦👏👏🍷

Thank you. I will do this. Here is a tip in return. I do the same with mushrooms Keeping mushrooms in plastic causes them to spoil within days. Keep them in fridge in a bowl lined with paper towel. They might dry out after a while. However, as long as they don't get a fishy odor about them they are okey. They kinda dehydrate. Great in eggs or soups. I rarely throw mushrooms away. I have subscribed to your channel.

I've been storing shredded cheeses in the freezer in a freezer bag. I usually take some
straight from the bag into whatever I'm cooking and let it melt that way. This works for
me!

Thanks for the great tips!
My rule of thumb with cheese is to never touch the cheese with my bare fingers when handling it (cutting and/or wrapping). No matter how clean your hands are, your skin will still transfer bacteria to the cheese and you'll know where you touched it within days because that's where the mold will start forming.

I store my cheese in a home made wax cloth. Works wonders. And I'm Dutch, so I know my cheeses 😉

Im not a cheese connoisseur- the only ones I buy are gouda and cheddar. I grate them soon after purchase, put them in plastic containers and into the freezer. I use it from frozen and put the remainder back in freezer. Works for me!

same goes for salad too. I used to use just a plastic bag, and slime was inevitable. Then I started wrapping the salad in a couple sheets of paper towel and put it in a plastic bag that is not sealed. Salad lasts 2-3 times as long with no slime. It just starts getting dried out.
