Raising the Portcullis at Warwick Castle.

This ritual is carried out at 10-30 am & is a very amusing way to welcome you to Warwick Castle ( apologies for occasional wind noise....too many baked beans for breakfast! ).

Why didn't they slide a metal bar or some wood across the top Portcullis to lock it in place so it couldn't be lifted?

Water boils at 212°F. Oil boils at 340-360° F. Personally I wouldn't want either poured on me from the murder hole.
