Yes! all by ear and when I can find a video of the original players on Youtube I try to check for the fingerings.
Oh and when I'm working on fast stuff I use Best Practice (Software) for slowing it down.

You just gotta work hard, to play fast just start slow and with a metronome, slowly (1 or 2 BPM per day) bringing the speed up. About Sweet Child o Mine I'm already workin on it so I should be posting it soon.
