No Bake Green Bean Casserole - the BEST Thanksgiving Side | An Idiot Cooks

Green bean casserole is the best Thanksgiving side dish and should be made ALL YEAR. Fight me. I needed to make it without an oven and this was fan-damn-tastic.

---recipe---
serves 4 (a.k.a. a single serving if you're me*)

-1 lb Green Beans, chopped to bite sized lengths
-8oz Mushrooms, roughly chopped
-1 Shallot, sliced
-1 large Clove Garlic, minced
-1/3c Heavy Cream
-1/4c Stock/Broth ( I used Chicken Bone Broth because I had it laying around)
-1c Shredded Sharp Cheddar (freshly grated if you have it)
-Fried Onions to cover
-3-5 Springs Fresh Thyme
-Salt, Pepper, Cayenne, & Chili Flakes to taste

-add small amount of oil or butter to a skillet on medium flame, add mushrooms, shallot, salt & pepper, chili flakes if using, and thyme leaves. Sauté until shrooms and shallots begin to take on color and liquid has cooked out.
-add garlic and cook until fragrant ~30sec-1min
-add stock/broth and green beans. Simmer, covered, until green beans begin to become tender
-before beans reach desired doneness, add cream and cheese, mixing thoroughly to melt
-reduce to desired thickness ( I like to let a small layer of crispy cheese form on the bottom)
-add fried onions top top, allow to heat, serve
-Enjoy~

*I'm only kind of joking. Green Bean casserole makes up MOST of my plate at Thanksgiving. However, this year I'm far from family and friends and decided that I would share this meal with people around me.
