This Basque cheesecake recipe is an absolute show-stopper. With its “burnt” or caramelized exterior and airy, mousse-like filling, it will disappear in a flash! It’s so simple to make, too, because there’s no need for a water bath or crust. One of my favorite qualities about a Basque burnt cheesecake is that it’s very forgiving, given its rustic appearance. Bake it at a high temperature so it puffs up and then deflates dramatically with a caramelized burnt top. This was actually my first cheesecake, actually scratch that. It was my first baked I ever did. Which is what introduce me into baking. I love this cheesecake more than the traditional one. It’s nice that this is getting more known.

I'm glad you said that. There are so many people out here acting like Basque Cheesecake purists, and it's only from the 90s/late 80s? They need to Calm Down. Getting upset, telling you you're doing it wrong, and acting like you're defiling their "traditional" cake by adding vanilla or lemon zest, or adjusting to an accessible cheese, when it's not even 40 years old 😂. At this point, you should be able to stylize however you want! These are the experimental years!

You're right on the origins of this cake! I'm basque and I didn't even know it existed for most of my life haha, it came from the one particular shop in San Sebastian and somehow blew up in recent years. We do have a traditional basque cake that's also very good, but it's not a cheesecake at all

Basque Cheesecake is my FAVORITE KIND of Cheesecake! My mum has a Mexican Cheesecake recipe that mostly burns the top and gives a caramelized color and flavor (is one of my favorite things in desserts) nothing wrong to regular cheesecake or NYC cheesecake! In my opinion, Basque Cheesecake is better! 😋😋

My hubby made this for me last week. We just finished the last piece. SO GOOD! Just yummy and easy, so he says. I warmed it for like 20 seconds in the microwave because our fridge is very cold. It was so good, another winner John!

I had only 2 …. 8 oz cream cheese on hand .
I made the recipe 95% like John said because I didn’t had 3 ..8 oz cream cheese ..& substituted powdered erythritol for sugar.
Came out sooper delicious

2….8 oz cream cheese
3/4 cup powdered erythritol
1/2 tsp salt
1 tsp vanilla extr
3 eggs
1 tbsp flour
3/4 cup heavy cream
