Kashmiri Chicken Curry is a lip-smacking main dish recipe that you can cook for your family and friends on special occasions and festivals. This chicken recipe will be an all-time winner at any party. For all non-vegetarian food lovers, this Kashmiri recipe is like icing on the cake as it includes the aromatic flavours of ground spices with coconut milk. Once you start making this chicken recipe at home you would not be able to resist taking a bite of it. Whole spices get a brief sauté in hot oil, onions are browned, and a purée of garlic and ginger is added to the pan. Next up are puréed tomatoes and ground spices and finally pieces of chicken. While the chicken cooks, the sauce reduces into a multilayered tomatoey gravy that although rich in flavors and spice, retains a wonderful lightness. I chose chicken thighs, but a whole, cut up chicken would do nicely as well.
