Smash the garlic, add some dill, a split spicy pepper and bay leaf. Always interested in how other peoples pickles taste! Try beans too! I absolutely love spicy dilly beans.

Adding something tannic (traditionally bay leaves and/or grape leaves, but tons of options) and calcium chloride can each help to retain more snap on the pickles

Quick little tip for the beginners that are here. It is better to weight out your ingredients for brine liquids. Not all salt crystals are the same by volume and you can under or over-salt your brine using a volume like a tablespoon or a cup. Plus doing the math with grams is super easy for 2% - 5% salt to liquid ratio.

Throw a split habanero in there for big spice kick, the flavour of a habanero goes so well! Be warned though, you will fly through jars lmao

Add wine, cherry or oak leaves for some tanins-they will make your pickles super crunchy :) Greetings from Poland

If you get tired of pickles, try fresh cuke chunks & avocado chunks mixed together with lemon & kosher salt. Be sure to strip the seeds out for a less watery salad. So delicious and refreshing for a summer meal. For extra punch try adding grilled chicken pieces. Now, it's a complete meal.

A teaspoon of mustard seeds adds a nice light yeallow glow, also the mustard seeds swell and taste nice.

If you want a refreshing drink, you can slice some cucumbers, and put them in a saucepan with honey, water, and some lemon juice then simmer it for a bit before straining and serving.
Classic summer flavors, always nice together.

It’s also an easy way to use up some crystallized honey, just put some warm water in the honey container and shake it around to dissolve it a bit before pouring it in the pan.

Just small tip not sure if you know this or not but it’s heavily recommended to store your jars without the rings because it allows you to detect a faulty seal also only use finger tip tight when canning cus it helps with a proper seal as well……your pickles look amazing the colors and crispness are awesome

I like a simple salad with cucumbers and tomatoes in about equal amounts, half that much of celery, red bell pepper, and red onion if you like. Cut everything in similar sizes. Add salt and pepper and stir, the salt will start drawing liquid off the veg, then you can add something creamy. I like bottled bleu cheese dressing. You might do greek yogurt or sour cream or some ranch, or maybe some cream or buttermilk. It takes very little of that because the liquid will thin out and coat the salad perfectly within a couple of hours. I make a huge bowl and work on it until I'm tired of it then add some half cooked rotini and chunked up chicken. Back to the fridge. The liquid from the veg will soak into the pasta. Some fresh herbs....easy to finish.

You need dill for freshness. You also need tannin for the crunch. Traditionally bay leaf is used. You also used less peppercorns.

Small whole pickling cucumbers taste so much better than spears. My recipe uses a lot of fresh, leafy dill. I love the crunch of small, whole pickles. Spears tend to lack that crispiness

I know everyone does things differently, but I've found that storing your canned jars without the rings on makes it MUCH easier to tell if a seal has gone bad over time! Love the pickles though! I didn't get cucumbers planted this year, except for 2 plants that got wiped out by frost, but I hope to get some going indoors soon to get a head start this year!

Store without the rings. That way you don't have false seals and rancid product. Plus it saves you from having to buy a ton of rings and you only need rings to can and when you open the jar. Plus the rings can rust to the jar.
Always store canned goods in a cool, dark area with a consistent temperature.
